Mushroom Soup

Chances are if you're into dieting, you'll have heard of the Cabbage Soup diet.  Well, with this easy recipe, you can try your own variation, in the Mushroom Soup diet.  This allows you an equally healthy alternative to Cabbage Soup, which can provide some much needed variation in the midst of an otherwise boring diet plan.  As well as being a tasty alternative to plain old cabbage soup, this mushroom soup recipe is also substantially more filling, and equally as good for you.

To start with, you need to take one pack of mushrooms and finely chop.  Throw in a pot with some oil or butter, and cook until juicy.  Next, stir in some onions, or alternatively whatever other vegetables you want to add to 'beef' out your soup.  By cooking all the vegetables over a moderate temperature, you should release all the juices and flavors, which will really add to your soup.  The idea is that by cooking vegetables first, you can ensure they are cooked to perfection in your soup, and indeed combine all the rich and diverse flavors.

After you've cooked the vegetables, it is time to make the stock.  Take some vegetable stock cubes, and mix accordingly with boiling water.  Allow the stock to dissolve fully in the boiling water.  Pour this over the vegetables and mix.  Add garlic, and stir all the ingredients well.  Heat in a pan until boiled, and cook for around fifteen to twenty minutes.  Alternatively, you can take some stock mix and stir through, although take care when using chicken stock not to affect the taste adversely.

For the finishing touches, add croutons.  You can make your croutons by toasting bread under a grill and cutting to size.  It's also a good idea to push the croutouns down into the soup to allow it to soak up the juices for added flavor and texture. Simply add to the soup with a touch of cream where desired.  Then, serve and season to taste.  Enjoy with a slice of whole-meal bread on a cold afternoon, for the greatest effect, so you can fully appreciate this great taste.

This mushroom soup is an easy and tasty recipe which is also so healthy, combining a variety of vegetables for added substance.  Having this twice a day can be a great way to lose weight quickly, and it can easily help shave pounds and inches off that waste-line.
